Matar-Paneer

Matar-Paneer with jeera rice made for a perfect combination for lunch today. Matar-Paneer is a dish from North Indian cuisine in which green peas and paneer/cottage cheese are cooked in a tomato based gravy seasoned with a blend of whole spices and spice powders. Green peas are a winter produce and the fresh ones have made it into the markets already. While matar-paneer can be made both with fresh or frozen green peas, the curry made with fresh peas is a total delight! Gousto Aubergine Thai Curry

This is a fairly simple curry straight from Gousto, the recipe box people. And its one I use again and again as I know my 8 year old loves it, plus it makes a delicious veggie meal. It uses a basic red thai paste, I just use Tesco version and throw the whole jar in for 4 people, then follow the recipe. With creamed coconut, vegetable stock and a last minute kick of fresh lime juice making up the rest of the sauce, its super tasty. Red lentil, chickpea and spinach curry

Red lentils give a lovely texture as a base to a stew or curry. They are inexpensive and require no soaking so dont take long to cook. I served this with fragranced rice but it works just as well with flat breads. Ill post a recipe for 2-ingredient flat breads soon. Ive just realised I havent posted a recipe for fragranced rice either,Id best get on that. Whatever you do, dont throw away the chickpea water.
